Marites helps make lechon in the Philippines (June/2005)

Much  thanks goes to Marites' grandfather back on Camotes island, for helping us figure out how to make lechon "the old fashioned way".

From Wikipedia, the free encyclopedia...the definition of lechon;

Lechón (Tagalog: Litson and Cebuano: Inasal) is the Spanish word for suckling pig. In the Philippines, it implies a whole roasted pig, lechón baboy. Chicken and beef, are also popular. The process of lechón involves the whole pig/piglet, chicken, or cattle/calf being slowly roasted over charcoal.
