that the pork is USDA inspected and of the highest quality.
Then we use only gourmet spices and seasonings along with fresh herbs and vegetables
to fill our lechon. As they slow roast over a charcoal fire, their juices blend and marinade the surrounding meat. This
creates a moist, succulent feast tempting to even the most devout vegetarians!
AHHHH...and let's not forget the skin! Crisp, deep in color AND in flavor. But
we don't use sugary gimmicks to caramelize our skin. We baste once with young coconut juice, and then let our coals give us
the color and texture we desire.
