The following chart is to give you an idea how butchering lowers the weight of the pig and also
to serve as a reference as to the size of the CARCASS you will need.
The number of guests served per lechon are based on 1.4 lbs. of lechon being consumed per person.
This is an ideal estimate "IF" you don't plan serving other
types of food at your gathering.
If you do plan on serving other foods, your lechon will serve more people as their serving size will decrease.
Please take note: due to the size limitations of our roaster, the largest CARCASS
we can roast is 77 LBS. (55 guest booking)
